Ingredients

  • 12 oz spaghetti

  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1 can (10 oz) cream of chicken soup (or cream of mushroom for a vegetarian option)
  • ½ cup sour cream
  • 1½ cups shredded Mexican blend cheese (or cheddar)
  • ½ cup cream cheese, softened
  • ½ cup black beans (optional)
  • ½ cup corn kernels (optional)
  • Salt and pepper, to taste
  • Fresh cilantro or green onions, chopped (for garnish)

Instructions

  1. Cook the spaghetti:
  • Preheat the oven to 350°F (175°C).
  • Boil water in a large pot with a pinch of salt. Cook spaghetti according to package directions until al dente. Drain and set aside.
