Ingredients
- 8 oz (225g) pasta (penne, fettuccine, or your favorite)
- 2 tbsp olive oil
- 1 lb (450g) salmon fillet, skin removed and cubed
- 3 cups fresh spinach, roughly chopped
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup Parmesan cheese, grated
- 1 tbsp lemon juice
- Salt and pepper to taste
- Red pepper flakes (optional, for a bit of heat)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.
- Sear the salmon: In a large skillet, heat olive oil over medium heat. Add cubed salmon, season with salt and pepper, and cook for 3-4 minutes per side, or until the salmon is cooked through and slightly golden. Remove the salmon from the pan and set aside.
- Sauté the onion and garlic: In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
- Add the spinach: Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Prepare the creamy sauce: Stir in the heavy cream, Parmesan cheese, and lemon juice. Let the sauce simmer for 3-4 minutes, stirring occasionally, until it thickens. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
- Combine everything: Return the cooked salmon to the skillet and gently fold it into the sauce. Add the cooked pasta and toss to coat evenly with the creamy sauce.
- Season and serve: Taste and adjust seasoning with salt, pepper, and red pepper flakes if desired. Garnish with fresh parsley and extra Parmesan if you like.
Enjoy your creamy salmon pasta with spinach!
