Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (sautéed and chopped)
  • 1½ teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups marinara sauce (homemade or store-bought)
  • Fresh basil leaves for garnish (optional)
  • Olive oil (for drizzling and cooking)

Instructions

  1. Boil the lasagna noodles
Bring a large pot of salted water to a boil. Add the lasagna noodles and cook until al dente according to the package instructions. Once cooked, drain and lay them flat on a parchment-lined tray or lightly oiled surface to prevent sticking.
  2. Prepare the ricotta filling
In a large bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, sautéed spinach, Italian seasoning, garlic powder, salt, and black pepper. Mix thoroughly until everything is well incorporated into a smooth, creamy mixture.
  3. Preheat the oven
Set your oven to preheat at 375°F (190°C). Prepare a large baking dish by spreading a thin layer of marinara sauce on the bottom to prevent sticking and add flavor.
  4. Assemble the roll ups
Take each cooked lasagna noodle and spread about 2–3 tablespoons of the ricotta filling evenly along its length. Gently roll the noodle up, starting from one end and finishing with the seam side down.
  5. Place in baking dish
Arrange the rolled noodles seam side down in the prepared baking dish. Continue until all noodles are filled and placed snugly together in the dish.
  6. Top with sauce and cheese
Pour the remaining marinara sauce evenly over the roll ups, making sure each one is generously coated. Sprinkle a little extra mozzarella and Parmesan cheese on top for a delicious cheesy crust.
  7. Bake to perfection
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10–15 minutes, or until the cheese is bubbling and slightly golden on top.
  8. Let it rest and garnish
Remove the lasagna roll ups from the oven and allow them to rest for 5 minutes. Garnish with fresh basil leaves if desired, and serve warm.
