Instructions
- In a mixing bowl, beat the softened cream cheese until smooth and creamy.
- Slowly add in the sweetened condensed milk and mix until well combined.
- Stir in the lemon juice, lemon zest, and vanilla extract. Mix until the mixture thickens slightly.
- Pour the creamy lemon filling into the graham cracker crust.
- Chill in the refrigerator for at least 2 hours or until set (or enjoy immediately for a softer texture).
- Top with whipped cream before serving, if desired.
