A hearty and comforting soup made with creamy potatoes, savory ham, and rich broth.
Ingredients:
- 1 tablespoon butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup cooked ham, chopped
- Salt and pepper to taste
Instructions:
- Sauté the aromatics: In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
- Add potatoes and broth: Stir in the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Blend for creaminess: Using an immersion blender or a regular blender, puree the soup until smooth.
- Stir in cream and ham: Return the soup to the pot and stir in the heavy cream and chopped ham. Season with salt and pepper to taste.
- Heat and serve: Bring the soup back to a simmer and serve immediately.
Optional: For a thicker soup, you can whisk in a tablespoon of cornstarch mixed with a tablespoon of water.
