Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 medium potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup milk
- 1 cup heavy cream
- 1 cup diced ham
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions:
- Sauté vegetables: Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
- Add potatoes and broth: Add potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Blend (optional): For a smoother soup, use an immersion blender to partially blend the soup in the pot. Alternatively, you can transfer about half of the soup to a blender and blend until smooth, then return to the pot.

- Add ham and parsley: Stir in diced ham and chopped parsley. Season with salt and pepper to taste.
