Creamy Ham and Potato Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 medium potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1 cup diced ham
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Sauté vegetables: Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  2. Add potatoes and broth: Add potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  3. Blend (optional): For a smoother soup, use an immersion blender to partially blend the soup in the pot. Alternatively, you can transfer about half of the soup to a blender and blend until smooth, then return to the pot.
