Creamy Garlic Mushroom Chicken Recipe

This recipe features tender chicken pieces simmered in a rich and creamy garlic mushroom sauce. It’s a flavorful and comforting dish that’s relatively easy to make and perfect served over rice, pasta, or mashed potatoes.

Ingredients:

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 1 pound cremini or button mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

  1. Sauté Chicken: Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté Onion and Mushrooms: Add the sliced onion to the skillet and cook until softened and translucent, about 5-7 minutes. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 8-10 minutes.
  3. Add Garlic and Herbs: Stir in the minced garlic, dried thyme, and dried rosemary. Cook for another minute until fragrant. Season with salt and pepper.
  4. Deglaze with Broth: Pour the chicken broth into the skillet and scrape up any browned bits from the bottom. Bring the mixture to a simmer and cook for a few minutes, allowing it to reduce slightly.
  5. Add Cream: Stir in the heavy cream and bring the sauce back to a gentle simmer. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
  6. Return Chicken to Skillet: Return the cooked chicken pieces to the skillet and stir to coat them evenly with the creamy mushroom sauce. Heat through for a minute or two.
  7. Garnish and Serve: Sprinkle the chopped fresh parsley over the creamy garlic mushroom chicken. Serve hot over rice, pasta, mashed potatoes, or with crusty bread for soaking up the delicious sauce.

Tips and Notes:

  • Chicken Choice: You can use either chicken breasts or thighs for this recipe. Thighs tend to be more flavorful and remain moist during longer cooking.
  • Mushroom Variations: Feel free to use different types of mushrooms, such as shiitake or a mixed variety.
  • Herb Variations: Fresh thyme and rosemary can be used instead of dried, use about 1 tablespoon of each.
  • Wine Addition (Optional): For extra flavor, you can add 1/4 cup of dry white wine to the skillet after sautéing the mushrooms. Let it reduce slightly before adding the chicken broth.
  • Thickening the Sauce: If you prefer a thicker sauce, you can whisk in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water towards the end of cooking. Simmer until thickened.
  • Make Ahead: You can prepare the creamy mushroom chicken ahead of time and store it in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
