Instructions:

  2. Scald milk: In a saucepan, heat milk over medium heat until small bubbles form around the edges.
  3. Temper eggs: Slowly pour about 1/4 cup of the hot milk into the egg yolk mixture, whisking constantly. This tempers the eggs, preventing them from scrambling.
  4. Combine: Gradually pour the tempered egg mixture back into the saucepan with the remaining milk, whisking continuously.
  5. Cook and stir: Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon. This will take about 5-7 minutes.
  6. Remove from heat: Remove the pan from heat and stir in vanilla extract and salt.
  7. Strain (optional): For extra smoothness, strain the custard through a fine-mesh sieve into a bowl.  
  8. Chill: Cover the custard with plastic wrap, ensuring the wrap touches the surface to prevent a skin from forming. Refrigerate for at least 2 hours, or until completely chilled.
