Creamy Cucumber Salad Recipe

This refreshing salad is a delightful mix of crisp cucumbers, juicy tomatoes, hard-boiled eggs, and red onion, all coated in a creamy and tangy dressing. It’s a perfect side dish for picnics, barbecues, or any summer gathering.  

Ingredients:

  • 2 medium cucumbers, peeled, seeded, and sliced
  • 2 medium tomatoes, diced
  • 4 hard-boiled eggs, peeled and chopped
  • 1/2 red onion, thinly sliced
  • For the Dressing:
    • 1/2 cup mayonnaise
    • 2 tablespoons sour cream (or Greek yogurt)  
    • 2 tablespoons apple cider vinegar
    • 1 tablespoon Dijon mustard
    • 1 tablespoon sugar (or honey)
    • 1 teaspoon dried dill (or 2 tablespoons fresh dill, chopped)
    • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables and Eggs: Peel, seed, and slice the cucumbers. Dice the tomatoes. Peel and chop the hard-boiled eggs. Thinly slice the red onion.
  2. Combine Ingredients: In a large bowl, gently combine the sliced cucumbers, diced tomatoes, chopped hard-boiled eggs, and sliced red onion.
  3. Prepare the Dressing: In a separate bowl, whisk together the mayonnaise, sour cream (or Greek yogurt), apple cider vinegar, Dijon mustard, sugar (or honey), dried dill (or fresh dill), salt, and pepper.
  4. Dress the Salad: Pour the dressing over the cucumber mixture and toss gently to coat all the ingredients evenly.
  5. Chill: Cover the bowl and refrigerate for at least 30 minutes, or preferably 1-2 hours, to allow the flavors to meld and the salad to chill.
