Creamy Cucumber Salad Recipe

This refreshing and creamy cucumber salad is perfect for picnics, barbecues, or as a light side dish. It’s easy to make and packed with cool, crisp flavors.

Ingredients:

  • 2 large cucumbers (English or regular), peeled and thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup sour cream or Greek yogurt (for a lighter option)  
  • 2 tablespoons mayonnaise
  • 1 tablespoon white vinegar or apple cider vinegar
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the Cucumbers and Onions:
    • Peel the cucumbers and slice them thinly.
    • Thinly slice the red onion.
    • If you are using regular cucumbers that have alot of water in the seeds, it is a good idea to remove the seeds. This can be done by slicing the cucumber in half lengthwise, and using a spoon to scrape out the seeds.
  2. Combine Ingredients:
    • In a large bowl, combine the sliced cucumbers and red onion.
    • In a separate small bowl, whisk together the sour cream (or Greek yogurt), mayonnaise, vinegar, dill, sugar (if using), salt, and pepper.
  3. Dress the Salad:
    • Pour the creamy dressing over the cucumbers and onions.
    • Gently toss everything together until the cucumbers and onions are evenly coated.
  4. Chill and Serve:
    • Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld and the salad to chill.
    • Before serving, give the salad another gentle toss.
    • Serve cold.

Optional Additions:

  • Add a sprinkle of fresh parsley or chives for extra flavor and garnish.
  • For a bit of crunch, add some toasted sunflower seeds or chopped walnuts.
  • A pinch of garlic powder added to the dressing can also add a nice flavor.
