Ingredients:
- 2 large cucumbers (English or regular), peeled and thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 cup sour cream or Greek yogurt (for a lighter option)
- 2 tablespoons mayonnaise
- 1 tablespoon white vinegar or apple cider vinegar
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Instructions:
- Prepare the Cucumbers and Onions:
- Peel the cucumbers and slice them thinly.
- Thinly slice the red onion.
- If you are using regular cucumbers that have alot of water in the seeds, it is a good idea to remove the seeds. This can be done by slicing the cucumber in half lengthwise, and using a spoon to scrape out the seeds.
- Combine Ingredients:
- In a large bowl, combine the sliced cucumbers and red onion.
- In a separate small bowl, whisk together the sour cream (or Greek yogurt), mayonnaise, vinegar, dill, sugar (if using), salt, and pepper.
- Dress the Salad:
- Pour the creamy dressing over the cucumbers and onions.
- Gently toss everything together until the cucumbers and onions are evenly coated.
- Chill and Serve:
- Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld and the salad to chill.
- Before serving, give the salad another gentle toss.
- Serve cold.
