Creamy Coconut Custard Recipe

Indulge in the rich and tropical flavors of this easy-to-make creamy coconut custard. Perfect as a light dessert or a comforting treat.

Ingredients:

  • 1 (14.5 oz) can full-fat coconut milk
  • 1/2 cup granulated sugar (adjust to your preference)
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup shredded coconut (for garnish, optional)
  • Fresh fruit (for garnish, optional)

Instructions:

  1. Combine Coconut Milk, Sugar, and Salt: In a medium saucepan, whisk together the coconut milk, sugar, and salt.
  2. Heat the Mixture: Place the saucepan over medium heat and cook, stirring occasionally, until the sugar is dissolved and the mixture is just simmering. Do not boil.
  3. Temper the Egg Yolks: In a separate bowl, whisk the egg yolks. Slowly drizzle a few tablespoons of the hot coconut milk mixture into the egg yolks, whisking constantly. This process is called tempering and prevents the yolks from scrambling. Continue adding the hot coconut milk mixture gradually, a few tablespoons at a time, while whisking continuously.
  4. Return to the Saucepan: Pour the tempered egg yolk mixture back into the saucepan with the remaining coconut milk mixture.
  5. Cook the Custard: Cook over low heat, stirring constantly with a wooden spoon, until the custard thickens enough to coat the back of the spoon. This should take about 5-7 minutes. Be careful not to let the custard boil, as this will cause it to curdle.  
  6. Add Vanilla Extract: Remove the saucepan from the heat and stir in the vanilla extract.
  7. Strain the Custard (Optional): For a smoother custard, strain it through a fine-mesh sieve into a clean bowl. This will remove any lumps or cooked egg bits.
  8. Chill the Custard: Cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 2 hours, or until completely chilled.  
  9. Serve: Once chilled, spoon the coconut custard into individual serving dishes.
  10. Garnish (Optional): Sprinkle with shredded coconut and top with fresh fruit for an extra touch.
