INGREDIENTS
For the Cake:
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter (softened)
- 1 ¾ cups sugar
- 4 large eggs
- 1 cup coconut milk
- 1 tsp vanilla extract
For the Soaking Mixture:
- 1 cup cream of coconut
- 1 cup sweetened condensed milk
For the Frosting:
- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
Topping:
- 2 cups shredded or flaked coconut
INSTRUCTIONS
- Preheat Oven
Preheat your oven to 180°C (350°F). Grease and line cake pans. - Prepare Dry Ingredients
In a bowl, whisk together flour, baking powder, baking soda, and salt. - Mix Wet Ingredients
In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla. - Combine Batter
Add dry ingredients alternately with coconut milk. Mix until smooth. - Bake the Cake
Pour batter into pans and bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely. - Soak the Cake
Mix cream of coconut and condensed milk. Poke holes in the cake and pour mixture evenly over it. - Prepare Frosting
Whip heavy cream with powdered sugar and vanilla until soft peaks form. - Assemble & Decorate
Spread frosting over the cake and generously cover with shredded coconut. - Chill & Serve
