This classic dessert is a simple yet elegant treat. The rich custard is infused with warm cinnamon for a comforting flavor.
Ingredients:
- 4 large egg yolks
- 1/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon ground cinnamon, plus more for garnish
- Pinch of nutmeg (optional)
Instructions:
- Whisk together: In a medium bowl, whisk together egg yolks, sugar, flour, and salt until smooth.
- Scald milk and cream: In a saucepan over medium heat, combine milk and cream. Heat until small bubbles begin to form around the edges, then remove from heat.
- Temper eggs: Slowly pour about 1 cup of the hot milk mixture into the egg yolk mixture, whisking constantly to prevent scrambling.
- Combine: Pour the tempered egg mixture back into the saucepan with the remaining milk mixture.
- Cook and stir: Cook over medium-low heat, stirring constantly with a whisk, until the custard thickens and coats the back of a spoon. This will take about 5-7 minutes. Be careful not to let the custard boil, as it will curdle.
- Remove from heat: Remove the saucepan from heat and stir in vanilla extract, cinnamon, and nutmeg (if using).
- Strain (optional): For extra smoothness, strain the custard through a fine-mesh sieve into a bowl.
- Chill: Let the custard cool completely at room temperature, then cover and refrigerate for at least 2 hours, or until chilled.
- Serve: Serve chilled in bowls or ramekins. Garnish with a sprinkle of cinnamon.
