Creamy Chicken & Vegetable Crepes Recipe

Ingredients:

For the Crepes:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1 tablespoon butter, melted

For the Filling:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions:

Make the Crepes:

  1. In a medium bowl, whisk together the flour, eggs, milk, salt, and melted butter until smooth.
  2. Heat a non-stick skillet over medium heat. Pour a small amount of batter into the skillet, swirling to coat the bottom. Cook until the edges are set and the bottom is golden brown. Flip and cook for a few more seconds.
  3. Repeat with the remaining batter, stacking the crepes on a plate as you go.

Prepare the Filling:

  1. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on all sides. Remove from the skillet and set aside.  
  2. In the same skillet, add the onion, bell pepper, and mushrooms. Cook until softened. Add the garlic, thyme, salt, and pepper. Cook for 30 seconds more.
  3. Return the chicken to the skillet and pour in the heavy cream. Bring to a simmer and cook until the sauce thickens. Stir in the Parmesan cheese.

Assemble the Crepes:

  1. Place a spoonful of the chicken and vegetable mixture in the center of a crepe. Fold the sides of the crepe over the filling, then roll it up.
  2. Repeat with the remaining crepes and filling.

Serve:

  1. Serve the crepes immediately, or reheat them in a skillet or oven. Garnish with fresh herbs, if desired.

Tips:

  • For a richer flavor, use a combination of heavy cream and milk for the sauce.
  • To make the crepes ahead of time, wrap them individually in plastic wrap and store them in the refrigerator.
