Creamy Chicken Lasagna with White Sauce

Ingredients

For the White Sauce:

  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated Parmesan cheese

For the Lasagna:

  • 12 lasagna noodles, cooked and drained
  • 3 cups cooked shredded chicken (rotisserie works great)
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup ricotta cheese
  • 1 cup fresh spinach (optional)
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Prepare the White Sauce:
    • In a saucepan over medium heat, melt butter.
    • Whisk in flour and cook for 1 minute.
    • Slowly add milk and heavy cream, whisking constantly until smooth.
    • Stir in garlic powder, salt, black pepper, and Parmesan cheese. Simmer until thickened.
  2. Assemble the Lasagna:
    • Preheat oven to 375°F (190°C).
    • In a greased 9×13-inch baking dish, spread a thin layer of white sauce.
    • Layer 3 lasagna noodles, followed by shredded chicken, ricotta, spinach, and a sprinkle of mozzarella and Monterey Jack cheese.
    • Repeat layers until ingredients are used up, finishing with noodles, white sauce, and remaining cheese on top.
  3. Bake:
    • Cover with foil and bake for 25 minutes.
    • Remove foil and bake an additional 15 minutes, until bubbly and golden brown.
  4. Serve:
    • Let rest for 10 minutes before slicing. Garnish with fresh parsley if desired.
