Ingredients:
- For the Roll-Ups:
- 9 lasagna noodles
- 2 cups cooked, shredded chicken (rotisserie chicken works great)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (plus more for topping)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- For the Alfredo Sauce:
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Lasagna Noodles: Boil the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel.
- Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well until combined.
- Make the Alfredo Sauce: In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute. Pour in the heavy cream, and bring to a simmer. Stir in the Parmesan cheese, and season with salt and pepper. Let it thicken for about 2-3 minutes, then remove from heat.
- Assemble the Roll-Ups: Spread a thin layer of Alfredo sauce on the bottom of a greased 9×13-inch baking dish. Take a lasagna noodle and spread about 1/4 cup of the chicken filling on it. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.
- Top with Sauce and Cheese: Pour the remaining Alfredo sauce over the roll-ups, ensuring they’re well covered. Sprinkle additional mozzarella cheese on top.
- Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve hot and enjoy!
Tips:
- Feel free to add sautéed vegetables like spinach or mushrooms to the filling for extra flavor.
- You can substitute store-bought Alfredo sauce if you’re short on time.
