Ingredients
- 2 large carrots, peeled and chopped
- 1 large orange, peeled and segmented
- 1/2 cup plain yogurt (or coconut yogurt for dairy-free)
- 1/2 cup orange juice (freshly squeezed, if possible)
- 1 small piece fresh ginger (optional, for a zesty kick)
- 1 tablespoon honey or maple syrup (optional, to taste)
- 1/2 cup ice cubes (optional, for extra chill and thickness)
Instructions
- Add the chopped carrots and orange segments to a blender.
- Pour in the orange juice and add the yogurt.
- Add ginger if using, plus honey or maple syrup if you’d like it sweeter.
- Blend on high until smooth and creamy. If needed, add a bit more juice to reach your desired consistency.
- Add ice cubes and blend again until thick and frosty.
- Pour into a glass, garnish with an orange slice or a sprinkle of grated carrot if desired, and enjoy immediately!
