Creamy Baked Macaroni & Cheese Recipe

This recipe yields a rich, creamy, and cheesy baked macaroni and cheese that’s perfect for family dinners, potlucks, or any occasion where comfort food is needed.

Ingredients:

  • For the Macaroni:
    • 1 pound elbow macaroni
    • 4 quarts water
    • 1 tablespoon salt
  • For the Cheese Sauce:
    • ½ cup (1 stick) unsalted butter
    • ½ cup all-purpose flour
    • 4 cups whole milk
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 1/2 teaspoon dry mustard powder
    • 1/4 teaspoon paprika
    • 4 cups shredded sharp cheddar cheese (about 1 pound)
    • 2 cups shredded Monterey Jack cheese (about ½ pound)
    • 1 cup shredded Gruyere cheese (optional, for extra flavor)
  • For the Topping (Optional):
    • ½ cup breadcrumbs (panko or regular)
    • 2 tablespoons melted butter

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cook the Macaroni: Bring the water and salt to a boil in a large pot. Add the macaroni and cook according to package directions, but slightly underal dente (about 1-2 minutes less than the package suggests). Drain the macaroni and set aside.
  3. Make the Roux: In a large saucepan or Dutch oven, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until a light golden roux forms.
  4. Add the Milk and Seasonings: Gradually whisk in the milk, ensuring there are no lumps. Add the salt, pepper, dry mustard, and paprika. Continue to whisk until the sauce thickens, about 5-7 minutes.
  5. Melt the Cheese: Reduce the heat to low. Gradually add the shredded cheddar, Monterey Jack, and Gruyere (if using), stirring continuously until the cheese is completely melted and the sauce is smooth.
  6. Combine Macaroni and Sauce: Add the drained macaroni to the cheese sauce and stir until well coated.
  7. Transfer to Baking Dish: Pour the macaroni and cheese mixture into the prepared baking dish, spreading it evenly.
  8. Prepare the Topping (Optional): In a small bowl, combine the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture evenly over the macaroni and cheese.
  9. Bake: Bake for 25-30 minutes, or until the top is golden brown and the macaroni and cheese is bubbly.
  10. Cool and Serve: Let the macaroni and cheese cool for a few minutes before serving. Enjoy!

Tips and Variations:

  • For extra flavor, add cooked crumbled bacon, diced ham, or sautéed vegetables like onions and bell peppers to the macaroni and cheese.
  • Use different types of cheese, such as Gouda, Colby Jack, or Pepper Jack, for a unique flavor profile.
  • Add a dash of hot sauce, or a pinch of cayenne pepper to the cheese sauce for a little bit of heat.
  • For a crispier top, broil for the last few minutes of baking.
  • Allowing the dish to rest for 10 minutes after baking helps the sauce to thicken and set.
