Cream-Filled Cannoli

Ingredients

For the Shells:

  • 2 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 1/4 tsp salt
  • 3 tbsp cold unsalted butter, cut into small pieces
  • 1 egg
  • 1/2 cup sweet Marsala wine (or white wine)
  • 1 egg white (for sealing edges)
  • Oil for frying

For the Filling:

  • 2 cups ricotta cheese (drained overnight)
  • 3/4 cup powdered sugar (sifted)
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 cup mini chocolate chips or chopped candied orange peel (optional)

Instructions

  1. Make the Dough:
    • In a bowl, mix flour, sugar, and salt.
    • Cut in the butter until mixture is crumbly.
    • Add the egg and wine, mixing until a dough forms.
    • Knead until smooth, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the Filling:
    • In a bowl, beat the ricotta until smooth.
    • Add powdered sugar, vanilla, and cinnamon. Mix well.
    • Fold in chocolate chips or other mix-ins, if using.
    • Chill the filling until ready to use.
  3. Roll and Fry the Shells:
    • Roll dough thin (about 1/8 inch) and cut into 4-inch circles or ovals.
    • Wrap each around a cannoli form, sealing edge with egg white.
    • Heat oil to 350°F (175°C) and fry shells until golden brown.
    • Remove, drain on paper towels, and cool before removing forms.
  4. Fill and Serve:
    • Pipe filling into each shell using a pastry bag.
    • Dust with powdered sugar before serving.
