Cream Cheese Stuffed Banana Bread

INGREDIENTS

For the Banana Bread:

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 large egg
  • 1 tbsp all-purpose flour
  • 1/2 tsp vanilla extract

INSTRUCTIONS

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. Prepare banana bread batter:
    In a large bowl, mix mashed bananas and melted butter. Stir in sugar, egg, and vanilla. Add baking soda, salt, and flour. Mix until just combined.
  3. Make cream cheese filling:
    In a separate bowl, beat cream cheese until smooth. Add sugar, egg, flour, and vanilla. Beat until creamy and well combined.
  4. Layer in pan:
    Pour half of the banana bread batter into the prepared pan. Spread the cream cheese filling evenly over the batter. Top with the remaining banana bread batter.
  5. Bake:
    Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil in the last 15 minutes.
  6. Cool:
    Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
