Ingredients:

  • 8 soft flour tortillas
  • 2 cups cooked and shredded chicken
  • 1 (8 oz) package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese (or cheese blend)
  • 1 can (10 oz) enchilada sauce (green or red, depending on your preference)
  • 1/2 cup sour cream
  • 1/2 cup diced green chiles (optional, for added spice)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare Filling: In a large mixing bowl, combine the softened cream cheese, shredded chicken, 1/2 cup of cheddar cheese, 1/2 cup of Monterey Jack cheese, diced green chiles (if using), garlic powder, onion powder, ground cumin, salt, and pepper. Mix well until fully combined.
  3. Fill Tortillas: Lay a tortilla flat and spoon about 1/4 cup of the filling mixture onto the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
  4. Add Sauce and Topping: Pour the enchilada sauce evenly over the filled tortillas, covering them well. Sprinkle the remaining cheddar and Monterey Jack cheese on top.
  5. Bake: Place the baking dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Serve: Remove from the oven and let cool for a few minutes. Garnish with a dollop of sour cream and fresh cilantro, if desired. Serve warm and enjoy!
