Cranberry Orange Quick Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon grated orange zest
  • ¾ cup fresh orange juice
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 ½ cups fresh or frozen cranberries (coarsely chopped)
  • ½ cup chopped nuts (optional, like walnuts or pecans)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. In another bowl, whisk together orange juice, melted butter, and egg until well combined.
  4. Add the wet ingredients to the dry ingredients and stir just until moistened — do not overmix.
  5. Gently fold in the cranberries and nuts (if using).
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
