- For the Glaze: ½ cup powdered sugar and 1–2 tablespoons orange juice
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and orange zest. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in orange juice and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Fold in cranberries and nuts gently using a spatula. The batter will be thick.
- Pour the batter into the prepared pan, spreading it evenly. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
