A classic meatloaf recipe with a delicious sweet and savory glaze, reminiscent of the one served at Cracker Barrel.
Ingredients:
- Meatloaf:
- 2 pounds ground beef (80/20 blend)
- 1/2 cup chopped onion
- 1/4 cup chopped green bell pepper
- 3 large eggs, lightly beaten
- 1 cup crushed Ritz crackers
- 1/2 cup milk
- 1 cup shredded sharp cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Glaze:
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 teaspoon Dijon mustard
Instructions:
- Preheat oven: Set your oven to 350°F (175°C).
- Combine meatloaf ingredients: In a large bowl, combine the ground beef, onion, green bell pepper, eggs, crushed crackers, milk, cheese, salt, and pepper. Mix gently until just combined. Overmixing can make the meatloaf tough.
- Shape the loaf: Transfer the mixture to a loaf pan or a sheet pan lined with parchment paper. Shape it into a loaf.
- Bake: Bake for 30 minutes.
- Make the glaze: While the meatloaf bakes, combine the ketchup, brown sugar, and Dijon mustard in a small bowl.
- Glaze and bake: Remove the meatloaf from the oven. Spread the glaze evenly over the top. Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest and serve: Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
Tips:
- For extra flavor, add a pinch of garlic powder or onion powder to the meatloaf mixture.
- If you don’t have Dijon mustard, you can substitute with regular yellow mustard.
- To make the meatloaf even more moist, add a small can of diced tomatoes (drained) to the mixture.
- Serve the meatloaf with your favorite sides, such as mashed potatoes, green beans, and a salad.
Enjoy your homemade Cracker Barrel-style meatloaf!
