Ingredients

  • 1 ½ lbs ground beef
  • 1 small onion, finely chopped
  • ½ cup green bell pepper, finely chopped (optional)
  • 1 cup crushed Ritz crackers (about 1 sleeve)
  • 2 large eggs
  • ½ cup milk
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp dried parsley

For the Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp yellow mustard

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. In a large bowl, mix together ground beef, chopped onion, bell pepper, crushed crackers, eggs, milk, cheese, and seasonings until well combined.
  3. Shape mixture into a loaf and place in prepared pan.
  4. In a small bowl, mix glaze ingredients—ketchup, brown sugar, and mustard. Spread half over the meatloaf.
  5. Bake for 30 minutes, then top with remaining glaze.
  6. Continue baking for another 30 minutes, or until internal temperature reaches 160°F.
