Cracker Barrel Meatloaf

Ingredients

  • 2 lbs ground beef
  • 1 small onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1 1/2 sleeves Ritz crackers (about 45 crackers), crushed
  • 2 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce

For the topping:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tsp yellow mustard

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, onion, bell pepper, crushed crackers, eggs, cheese, milk, salt, pepper, garlic powder, and Worcestershire sauce.
  3. Mix just until combined—don’t overmix, or it may become dense.
  4. Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
  5. In a small bowl, mix ketchup, brown sugar, and mustard. Spread this glaze evenly over the top of the meatloaf.
  6. Bake for 55–60 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Let it rest for 10 minutes before slicing.
