Ingredients
- 2 lbs ground beef
- 1 small onion, finely chopped
- 1/2 cup green bell pepper, finely chopped
- 1 1/2 sleeves Ritz crackers (about 45 crackers), crushed
- 2 large eggs
- 1 cup shredded sharp cheddar cheese
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp Worcestershire sauce
For the topping:
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 tsp yellow mustard
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, onion, bell pepper, crushed crackers, eggs, cheese, milk, salt, pepper, garlic powder, and Worcestershire sauce.
- Mix just until combined—don’t overmix, or it may become dense.
- Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
- In a small bowl, mix ketchup, brown sugar, and mustard. Spread this glaze evenly over the top of the meatloaf.
- Bake for 55–60 minutes, or until the internal temperature reaches 160°F (70°C).
- Let it rest for 10 minutes before slicing.
