- 2 pounds ground beef (80/20 blend recommended)
- 1 cup finely diced onion
- 1/2 cup finely diced green bell pepper
- 1 cup crushed Ritz crackers (or similar buttery crackers)
- 3/4 cup shredded sharp cheddar cheese
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika (optional)
- 1/2 cup ketchup (for the glaze)
- 2 tablespoons brown sugar
- 1 teaspoon yellow mustard

- Preheat Oven: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
- Mix Ingredients: In a large mixing bowl, combine the ground beef, onion, green bell pepper, crushed crackers, cheddar cheese, eggs, milk, salt, pepper, garlic powder, and smoked paprika. Use your hands or a wooden spoon to mix until just combined; avoid overmixing.
- Shape the Meatloaf: Transfer the mixture to the prepared loaf pan and press gently to shape it evenly.
- Prepare the Glaze: In a small bowl, whisk together the ketchup, brown sugar, and mustard. Spread half of the glaze over the top of the meatloaf. Reserve the rest for later.
- Bake: Place the meatloaf in the oven and bake for 50-55 minutes.
- Add Remaining Glaze: Remove the meatloaf from the oven and spread the remaining glaze on top. Return it to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm with mashed potatoes, green beans, or your favorite sides.
