Ingredients
- 2 lbs ground beef
- 1/2 cup finely diced onion
- 1/2 cup finely diced green bell pepper
- 1 1/2 sleeves Ritz crackers, crushed (about 1 1/2 cups)
- 3/4 cup shredded sharp cheddar cheese
- 3 large eggs
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp dried oregano
- 1/4 tsp dried basil
- 1/2 cup ketchup (for glaze)
- 1/4 cup brown sugar (for glaze)
- 1 tsp yellow mustard (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
- In a large bowl, mix ground beef, onion, bell pepper, crushed Ritz crackers, shredded cheese, eggs, milk, salt, pepper, and seasonings. Combine well but don’t overmix.
- Transfer the mixture to the prepared loaf pan and shape into a loaf.
- Prepare the glaze: In a small bowl, mix ketchup, brown sugar, and mustard. Spread half of the glaze over the meatloaf.
- Bake uncovered for 45 minutes.
- Add remaining glaze on top and bake for another 15 minutes, or until the internal temperature reaches 160°F.
- Let it rest for 5-10 minutes before slicing. Serve warm with mashed potatoes or green beans.
