Cracker Barrel Meatloaf


Ingredients

  • 2 lbs ground beef
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced green bell pepper
  • 1 1/2 sleeves Ritz crackers, crushed (about 1 1/2 cups)
  • 3/4 cup shredded sharp cheddar cheese
  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/2 cup ketchup (for glaze)
  • 1/4 cup brown sugar (for glaze)
  • 1 tsp yellow mustard (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. In a large bowl, mix ground beef, onion, bell pepper, crushed Ritz crackers, shredded cheese, eggs, milk, salt, pepper, and seasonings. Combine well but don’t overmix.
  3. Transfer the mixture to the prepared loaf pan and shape into a loaf.
  4. Prepare the glaze: In a small bowl, mix ketchup, brown sugar, and mustard. Spread half of the glaze over the meatloaf.
  5. Bake uncovered for 45 minutes.
  6. Add remaining glaze on top and bake for another 15 minutes, or until the internal temperature reaches 160°F.
  7. Let it rest for 5-10 minutes before slicing. Serve warm with mashed potatoes or green beans.
