Ingredients

  • 2 lbs ground beef (80/20 works best)
  • 1 small onion, finely chopped
  • 1 small green bell pepper, finely chopped
  • 1 ½ cups crushed Ritz crackers (about 1 sleeve)
  • ½ cup milk
  • 2 large eggs, lightly beaten
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika (optional, for extra flavor)

For the Topping:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp yellow mustard

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. In a large mixing bowl, combine ground beef, onion, bell pepper, crushed crackers, milk, eggs, cheddar cheese, salt, pepper, garlic powder, and paprika. Mix gently with your hands until just combined (do not overmix or it may get tough).
  3. Transfer the mixture into the prepared loaf pan and shape into a loaf.
  4. In a small bowl, whisk together ketchup, brown sugar, and mustard. Spread evenly over the top of the meatloaf.
  5. Bake for 55–65 minutes, or until internal temperature reaches 160°F (70°C).
  6. Let rest for 10 minutes before slicing.
  7. Serve warm with mashed potatoes, green beans, or your favorite comfort sides.
