Ingredients
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 3 large eggs, separated
- ¾ cup whole milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ teaspoon cream of tartar
- Powdered sugar, for dusting (optional)
Instructions
- Preheat the oven to 325°F (165°C). Grease and line a 9-inch round cake pan with parchment paper.
- Mix the dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Combine the wet ingredients: In another bowl, whisk the egg yolks, milk, oil, and vanilla extract until smooth and well combined.
- Fold the wet and dry ingredients: Slowly add the dry ingredients to the wet mixture, stirring until the batter is smooth and lump-free.
- Whisk the egg whites: In a separate clean bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form.
- Fold in the egg whites: Gently fold the egg whites into the batter, being careful not to deflate the mixture. The batter should be light and airy.
- Bake the cake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes or until the cake is golden and a toothpick inserted into the center comes out clean.
- Cool the cake: Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
- Serve: Dust with powdered sugar, if desired, and serve as a delicious, light dessert for any occasion!
