Ingredients:
- 4 slices rye bread
- 1/4 cup Thousand Island dressing
- 8 slices Swiss cheese
- 8 ounces thinly sliced corned beef
- 1 cup sauerkraut, drained
- 2 tablespoons butter, softened
Instructions:
- Spread one side of each bread slice with Thousand Island dressing.
- Layer one slice of Swiss cheese, 2 slices of corned beef, and 1/4 cup of sauerkraut on top of 2 of the bread slices.
- Top with the remaining bread slices, dressing-side down.
- Butter the top of each sandwich.
- Heat a large skillet or griddle over medium heat.
- Place the sandwiches in the skillet and cook for 5 minutes per side, or until golden brown and the cheese is melted.
- Serve immediately.
Tips:
- For a crispier sandwich, you can toast the bread before assembling the sandwiches.
- If you don’t have Thousand Island dressing, you can use Russian dressing.
- You can add a layer of mustard to the sandwiches for extra flavor.
