Corned Beef Reuben Sandwich Recipe

Ingredients:

  • 4 slices rye bread
  • 1/4 cup Thousand Island dressing
  • 8 slices Swiss cheese
  • 8 ounces thinly sliced corned beef
  • 1 cup sauerkraut, drained
  • 2 tablespoons butter, softened

Instructions:

  1. Spread one side of each bread slice with Thousand Island dressing.
  2. Layer one slice of Swiss cheese, 2 slices of corned beef, and 1/4 cup of sauerkraut on top of 2 of the bread slices.
  3. Top with the remaining bread slices, dressing-side down.
  4. Butter the top of each sandwich.
  5. Heat a large skillet or griddle over medium heat.
  6. Place the sandwiches in the skillet and cook for 5 minutes per side, or until golden brown and the cheese is melted.
  7. Serve immediately.

Tips:

  • For a crispier sandwich, you can toast the bread before assembling the sandwiches.
  • If you don’t have Thousand Island dressing, you can use Russian dressing.
  • You can add a layer of mustard to the sandwiches for extra flavor.
