Ingredients
For the Dough:
- 2 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 1 packet (2 ¼ tsp) active dry yeast
- ½ tsp salt
- ¾ cup warm milk
- ¼ cup unsalted butter, melted
- 1 egg
For the Custard Filling:
- 1 cup milk
- ¼ cup granulated sugar
- 2 tbsp cornstarch
- 2 egg yolks
- 1 tsp vanilla extract
- 2 tbsp unsalted butter
For the Coconut Topping:
- 1 cup shredded coconut
- ¼ cup sweetened condensed milk
Instructions
- Prepare the Dough:
- In a small bowl, mix warm milk, yeast, and 1 tbsp sugar. Let sit for 5–10 minutes until foamy.
- In a large bowl, combine flour, remaining sugar, and salt.
- Add yeast mixture, melted butter, and egg. Mix and knead until smooth.
- Cover and let rise for 1 hour or until doubled in size.
- Prepare the Custard Filling:
- In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks.
- Cook over medium heat, stirring constantly, until thickened.
- Remove from heat and stir in vanilla and butter. Let cool completely.
- Assemble the Rolls:
- Roll out the dough into a rectangle. Spread custard evenly over the surface.
- Roll tightly from one end and slice into 12 pieces.
- Place rolls in a greased baking dish, cover, and let rise for another 30 minutes.
- Bake:
- Preheat oven to 350°F (175°C).
- Bake for 20–25 minutes or until golden brown.
- Add Coconut Topping:
- Mix shredded coconut with sweetened condensed milk.
- Spread over warm rolls and let set before serving.
