Coconut Rolls with Custard Filling

Ingredients

For the Dough:

  • 2 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • ½ tsp salt
  • ¾ cup warm milk
  • ¼ cup unsalted butter, melted
  • 1 egg

For the Custard Filling:

  • 1 cup milk
  • ¼ cup granulated sugar
  • 2 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter

For the Coconut Topping:

  • 1 cup shredded coconut
  • ¼ cup sweetened condensed milk

Instructions

  1. Prepare the Dough:
    • In a small bowl, mix warm milk, yeast, and 1 tbsp sugar. Let sit for 5–10 minutes until foamy.
    • In a large bowl, combine flour, remaining sugar, and salt.
    • Add yeast mixture, melted butter, and egg. Mix and knead until smooth.
    • Cover and let rise for 1 hour or until doubled in size.
  2. Prepare the Custard Filling:
    • In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks.
    • Cook over medium heat, stirring constantly, until thickened.
    • Remove from heat and stir in vanilla and butter. Let cool completely.
  3. Assemble the Rolls:
    • Roll out the dough into a rectangle. Spread custard evenly over the surface.
    • Roll tightly from one end and slice into 12 pieces.
    • Place rolls in a greased baking dish, cover, and let rise for another 30 minutes.
  4. Bake:
    • Preheat oven to 350°F (175°C).
    • Bake for 20–25 minutes or until golden brown.
  5. Add Coconut Topping:
    • Mix shredded coconut with sweetened condensed milk.
    • Spread over warm rolls and let set before serving.
