Coconut Rice Recipe

Coconut Rice is a fragrant and slightly sweet dish made by cooking white rice in coconut milk. The coconut milk infuses the rice with a rich, creamy flavor and a subtle sweetness that complements both savory and sweet dishes. Often a staple in tropical cuisines, coconut rice can be made simply with just rice, coconut milk, water (or broth), and sometimes a pinch of salt and sugar. Variations may include the addition of aromatics like pandan leaves, ginger, or lemongrass for extra fragrance. The result is a tender and flavorful rice that is a wonderful accompaniment to curries, grilled meats, seafood, stir-fries, or can even be enjoyed on its own as a simple and comforting dish.  

Ingredients:

  • 1 cup white rice (such as long-grain or jasmine)
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1 cup water or vegetable broth
  • 1/2 teaspoon salt (or to taste)
  • 1 teaspoon granulated sugar (optional, enhances sweetness)
  • Optional aromatics: 1-2 pandan leaves (knotted), a small piece of ginger (sliced), or 1 stalk of lemongrass (bruised)  

Equipment:

  • Medium saucepan with a tight-fitting lid
  • Measuring cups and spoons

Instructions:

  1. Rinse the Rice (Optional): Rinse the white rice under cold water for about 30 seconds to a minute, until the water runs clear. This helps to remove excess starch and can result in fluffier rice. Drain the rice well.
  2. Combine Ingredients: In the medium saucepan, combine the rinsed rice, coconut milk, water or vegetable broth, salt, and sugar (if using). If using any optional aromatics like pandan leaves, ginger, or lemongrass, add them to the saucepan as well.
  3. Bring to a Boil: Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent the rice from sticking to the bottom of the pan.  
  4. Simmer and Cover: Once the mixture is boiling, reduce the heat to low, cover the saucepan tightly with the lid, and let it simmer gently for 18-20 minutes. Avoid lifting the lid during this time, as it will release steam and affect the cooking process.
  5. Rest the Rice: After 18-20 minutes, remove the saucepan from the heat and let it stand, covered, for another 5-10 minutes. This resting time allows the rice to absorb any remaining liquid and become perfectly tender and fluffy.
  6. Fluff and Serve: Remove the lid and fluff the coconut rice gently with a fork. If you used any aromatics, remove them before serving.
  7. Serve Hot: Serve the coconut rice hot as a side dish with your favorite meals. It pairs particularly well with curries, grilled or roasted meats and vegetables, stir-fries, and seafood dishes. It can also be enjoyed on its own.
