Coconut Mousse Recipe

Ingredients:

  • 1 cup coconut milk (full-fat)
  • 1/2 cup heavy cream (chilled)
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (optional, for texture or garnish)
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons water

Instructions:

  1. Prepare the Gelatin:
    In a small bowl, sprinkle the gelatin over 2 tablespoons of water. Let it sit for 5 minutes to bloom.
  2. Heat the Coconut Milk:
    In a saucepan, warm the coconut milk over medium heat. Stir in the sugar until it dissolves. Remove from heat and stir in the bloomed gelatin until fully dissolved.
  3. Cool the Mixture:
    Allow the coconut milk mixture to cool to room temperature. Stir in the vanilla extract.
  4. Whip the Cream:
    Using a hand or stand mixer, whip the chilled heavy cream until stiff peaks form.
  5. Combine:
    Gently fold the cooled coconut milk mixture into the whipped cream until well incorporated. Be careful not to deflate the whipped cream.
  6. Chill:
    Pour the mousse into serving dishes or ramekins. Cover and refrigerate for at least 4 hours or until set.
  7. Serve:
