Coconut Custard Pie recipe

Ingredients

  • 4 large eggs
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup shredded sweetened coconut

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
  2. In a large mixing bowl, whisk together eggs, melted butter, sugar, and flour until smooth.
  3. Add milk, vanilla extract, and salt, then mix well until fully combined.
  4. Stir in the shredded coconut.
  5. Pour the batter into the greased pie dish. The mixture will be very thin—don’t worry, it will set as it bakes!
  6. Bake for 45-50 minutes, or until the center is set and a knife inserted comes out clean.
  7. Let the pie cool completely before slicing. The flour settles to form a light crust, creating a custard-like texture.
  8. Serve at room temperature or chilled. Enjoy!
