- 4 large eggs
- 1/2 cup (1 stick) unsalted butter, melted
- 3/4 cup granulated sugar
- 1/2 cup all-purpose flour
- 2 cups whole milk
- 1 teaspoon vanilla extract

- 1 cup shredded sweetened coconut
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
- In a large mixing bowl, whisk together eggs, melted butter, sugar, and flour until smooth.
- Add milk, vanilla extract, and salt, then mix well until fully combined.
- Stir in the shredded coconut.
- Pour the batter into the greased pie dish. The mixture will be very thin—don’t worry, it will set as it bakes!
- Bake for 45-50 minutes, or until the center is set and a knife inserted comes out clean.
- Let the pie cool completely before slicing. The flour settles to form a light crust, creating a custard-like texture.
