Instructions:
Make the Crust:
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, powdered sugar, and salt.
- Cut in Butter: Cut in the cold butter until the mixture resembles coarse crumbs.
- Form Dough: Add 2-3 tablespoons of ice water, one tablespoon at a time, and mix until the dough comes together.
- Roll Out Dough: Roll out the dough on a lightly floured surface to a 12-inch square.
- Transfer to Pan: Transfer the dough to a 9×13 inch baking pan and press into the bottom and up the sides.
- Prick the Crust: Prick the bottom of the crust with a fork.
Make the Filling:
- Combine Dry Ingredients: In a large bowl, whisk together the granulated sugar, flour, and salt.
- Add Wet Ingredients: Add the beaten eggs, coconut milk, and vanilla extract to the dry ingredients and whisk until smooth.
