Ingredients
- 2 cups cherry tomatoes, halved
- 1 large cucumber, sliced or diced
- 1/4 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar (or lemon juice)
- Salt and pepper to taste
- Fresh parsley or dill, chopped (optional)
Instructions
- In a large bowl, combine the halved cherry tomatoes, sliced cucumber, and red onion.
- Drizzle with olive oil and red wine vinegar (or lemon juice).
- Season with salt and pepper to your taste.
- Toss everything together until well coated.
- Garnish with chopped fresh herbs if using.
- Serve immediately or chill for 15–30 minutes for extra flavor!
