Classic Shepherd’s Pie Recipe

This recipe is for a comforting and hearty Classic Shepherd’s Pie, a traditional dish with a savory base of ground meat (typically lamb, though beef is also common and sometimes called Cottage Pie) cooked with vegetables in a rich gravy, topped with a layer of creamy mashed potatoes that is often baked until golden brown. Shepherd’s Pie is a quintessential comfort food, perfect for chilly evenings or a satisfying family meal. The base usually starts with ground lamb or beef that is browned and then combined with sautéed vegetables like onions, carrots, and peas in a flavorful gravy made with meat broth, often thickened with flour or cornstarch and seasoned with herbs like thyme and rosemary, as well as Worcestershire sauce for depth of flavor. The topping of mashed potatoes is crucial to the dish’s character. The potatoes are typically boiled until tender, then mashed with butter, milk or cream, and seasonings such as salt, pepper, and sometimes cheese or garlic for extra flavor. The mashed potatoes are spread evenly over the meat and vegetable mixture, creating a smooth and creamy top layer. For an appealing finish and added texture, the mashed potato topping is often swirled with a fork or knife before baking. The entire dish is then baked in the oven until the topping is lightly golden brown and the filling is bubbly and heated through. Classic Shepherd’s Pie is a complete meal in one dish, offering a satisfying combination of savory meat and vegetables under a comforting blanket of mashed potatoes. It’s a versatile recipe that can be adapted with different vegetables and seasonings to suit individual tastes. The image shows a rectangular baking dish filled with Shepherd’s Pie. The top layer is a smooth, golden-brown mashed potato crust that covers the savory filling underneath. The surface of the mashed potatoes has some slightly darker browned areas, indicating it has been baked. The dish is sitting on a stovetop, suggesting it has just been taken out of the oven.

The texture of Classic Shepherd’s Pie is a delightful contrast between the creamy, soft mashed potato topping and the rich, slightly chunky filling of tender ground meat and vegetables in a savory gravy.

The flavor profile is hearty and savory, with the earthy taste of the meat and vegetables enhanced by the rich gravy, often with notes of herbs and Worcestershire sauce, all topped with the comforting, buttery flavor of mashed potatoes.

Classic Shepherd’s Pie is a quintessential comfort food, perfect for a satisfying and warming meal, especially on a cold day.

The preparation involves cooking ground meat with vegetables in gravy, preparing creamy mashed potatoes, topping the meat mixture with the potatoes, and then baking until golden brown.

Ingredients:

For the Meat and Vegetable Filling:

  • 1 tablespoon olive oil or butter
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced (optional)
  • 1 pound ground lamb or ground beef
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary (optional)
  • 2 tablespoons all-purpose flour
  • 1 cup beef or lamb broth
  • ½ cup frozen peas
  • 1 tablespoon Worcestershire sauce
  • Salt and freshly ground black pepper to taste

For the Mashed Potato Topping:

  • 3 pounds russet or Yukon Gold potatoes, peeled and quartered
  • ½ cup milk or heavy cream, warmed
  • ¼ cup unsalted butter
  • Salt and freshly ground black pepper to taste
  • Optional: ½ cup shredded cheddar cheese or Parmesan cheese

Equipment:

  • Large skillet or Dutch oven
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Potato masher or electric mixer
  • Large saucepan (for boiling potatoes)
  • 9×13 inch baking dish or similar oven-safe dish
  • Fork (for swirling potatoes)

Instructions:

  1. Prepare the Potatoes: Place the peeled and quartered potatoes in a large saucepan and cover them with cold, salted water. Bring to a boil over medium-high heat and cook until the potatoes are tender and easily pierced with a fork, about 15-20 minutes. Drain the potatoes well and return them to the pot.
  2. Make the Mashed Potatoes: Mash the cooked potatoes with a potato masher or an electric mixer until smooth. Gradually add the warmed milk or cream and butter, mixing until creamy and well combined. Season generously with salt and freshly ground black pepper. If using cheese, stir it in until melted and combined. Set aside.
  3. Prepare the Meat and Vegetable Filling: While the potatoes are cooking, heat the olive oil or butter in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the diced carrots and celery (if using) and cook for another 5-7 minutes until slightly tender.
  4. Brown the Meat: Add the ground lamb or beef to the skillet and cook, breaking it up with a spoon, until it is browned and cooked through. Drain off any excess grease.
  5. Add Aromatics and Herbs: Stir in the minced garlic, dried thyme, and rosemary (if using) and cook for 1 minute until fragrant.
  6. Make the Gravy: Sprinkle the flour over the meat and vegetables and cook, stirring constantly, for 1 minute. Gradually pour in the beef or lamb broth, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer, stirring occasionally, until the gravy thickens.
  7. Add Peas and Worcestershire Sauce: Stir in the frozen peas and Worcestershire sauce. Season the filling with salt and freshly ground black pepper to taste.
  8. Assemble the Shepherd’s Pie: Preheat your oven to 375°F (190°C). Transfer the meat and vegetable filling to the bottom of a 9×13 inch baking dish or a similar oven-safe dish.
  9. Top with Mashed Potatoes: Spread the prepared mashed potatoes evenly over the meat filling, covering it completely. You can create swirls or patterns on the surface of the potatoes with a fork for a more visually appealing top and to increase surface area for browning.
  10. Bake the Shepherd’s Pie: Bake in the preheated oven for 20-25 minutes, or until the mashed potato topping is lightly golden brown and the filling is bubbly and heated through.
  11. Rest and Serve: Let the Shepherd’s Pie rest for a few minutes before serving. This allows the filling to settle slightly and makes it easier to serve.

Enjoy this comforting and delicious Classic Shepherd’s Pie! It’s a hearty meal that is perfect for any occasion.
