Classic Potato Pancakes Recipe

These crispy and golden potato pancakes are a traditional comfort food. They’re made with grated potatoes, onions, and eggs, then fried to perfection.  

Ingredients:

  • 2 pounds russet potatoes, peeled
  • 1 medium onion, peeled
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour (or matzo meal for a gluten-free option)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying  
  • Optional: Applesauce or sour cream, for serving
  • Optional: Chopped green onions, for garnish

Instructions:

  1. Grate the Potatoes and Onions: Grate the potatoes and onion using a box grater or a food processor with a grating attachment.  
  2. Drain Excess Liquid: Transfer the grated potatoes and onions to a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible. This step is crucial for crispy latkes.
  3. Combine Ingredients: In a large bowl, combine the drained potatoes and onions, eggs, flour (or matzo meal), salt, and pepper. Mix well.  
  4. Heat the Oil: Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.  
  5. Form the Latkes: Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with the back of a spoon.
  6. Fry the Latkes: Fry for 3-5 minutes per side, or until golden brown and crispy.
  7. Drain and Cool: Remove the fried latkes with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Serve: Serve the latkes immediately, garnished with chopped green onions if desired. They are traditionally served with applesauce or sour cream.  

Tips and Variations:

  • Potato Variety: Russet potatoes are ideal for latkes because they have a high starch content and low moisture.  
  • Onion Variety: You can use yellow, white, or red onions, depending on your preference.
  • Binding Agent: If the latkes are falling apart, you can add another egg or a bit more flour (or matzo meal).  
  • Seasoning: Experiment with other seasonings like garlic powder, paprika, or herbs.
  • Make-Ahead: You can prepare the potato mixture ahead of time and refrigerate it for up to a few hours. Drain the liquid again before frying.
  • Keep Warm: Keep the cooked latkes warm in a low oven (200°F/93°C) while you fry the rest.
  • Serving Suggestions: Latkes can also be served as a side dish with roasted meats or vegetables.
