Ingredients

  • 4 cups fresh or frozen peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with 1/2 cup of sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Set aside for about 10 minutes to allow the peaches to release their juice.
  3. While the peaches are resting, in another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
  4. Add the melted butter, milk, and vanilla extract to the flour mixture. Stir until just combined. The batter will be thick.
  5. Pour the peach mixture into a greased 9×13-inch baking dish. Spoon the batter evenly over the peaches. Do not stir; the batter will spread as it bakes.
