- 4 cups fresh or frozen peaches, peeled and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with 1/2 cup of sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Set aside for about 10 minutes to allow the peaches to release their juice.
- While the peaches are resting, in another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
- Add the melted butter, milk, and vanilla extract to the flour mixture. Stir until just combined. The batter will be thick.
- Pour the peach mixture into a greased 9×13-inch baking dish. Spoon the batter evenly over the peaches. Do not stir; the batter will spread as it bakes.
- Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cobbler cool slightly before serving. Serve warm with a scoop of vanilla ice cream or whipped cream for extra indulgence.
