Classic Meatloaf with a Rich, Tangy Glaze, Served Over Creamy Mashed Potatoes and Fresh Green Beans!

Ingredients

For the Meatloaf:
  • 1 ½ lbs ground beef (80/20)
  • ½ cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • ¼ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
For the Glaze:
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
For the Mashed Potatoes:
  • 2 lbs russet potatoes, peeled and cubed
  • ½ cup butter
  • ½ cup heavy cream
  • Salt and pepper to taste
For the Green Beans:
  • 1 lb fresh green beans, trimmed
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the meatloaf mixture: In a large bowl, combine ground beef, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix until just combined.
  3. Shape the meatloaf: Form the mixture into a loaf shape and place it on the prepared baking sheet.
  4. Make the glaze: In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and Dijon mustard. Spread half of the glaze over the meatloaf.
  5. Bake the meatloaf: Place in the oven and bake for 40 minutes. Remove, spread the remaining glaze on top, and bake for another 15-20 minutes or until the internal temperature reaches 160°F (71°C).
  6. Prepare the mashed potatoes: While the meatloaf bakes, boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, heavy cream, salt, and pepper until smooth and creamy.
  7. Cook the green beans: Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds. Add green beans, season with salt and pepper, and cook for 5-7 minutes until tender-crisp.
