Classic eclair dessert recipe

Ingredients

  • 1 box (8 oz) graham crackers
  • 2 packages (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 tub (8 oz) whipped topping (Cool Whip)
  • 1 cup chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Prepare the Pudding: In a large bowl, whisk together the instant vanilla pudding mix and cold milk until it thickens (about 2 minutes). Then fold in the whipped topping until smooth and combined.
  2. Layer the Graham Crackers: Arrange a layer of graham crackers at the bottom of a 9×13-inch dish. You might need to break some crackers to fit the pan properly.
  3. Add the Pudding: Spread half of the pudding mixture over the graham crackers in an even layer.
  4. Repeat the Layers: Add another layer of graham crackers, followed by the remaining pudding mixture. Top with a final layer of graham crackers.
  5. Make the Chocolate Topping: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chocolate chips. Stir until the chocolate is fully melted and smooth.
  6. Top the Dessert: Pour the melted chocolate over the top layer of graham crackers, spreading it evenly with a spatula.
  7. Chill: Refrigerate the dessert for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
  8. Serve: Once chilled, slice and serve. Enjoy your classic eclair dessert!
