A simple and delicious way to bake a fluffy potato with crispy skin.
Ingredients:
- 1 large russet potato per person (or another baking potato)
- 1 tablespoon olive oil (or vegetable oil)
- 1/2 teaspoon coarse sea salt (or kosher salt)
- Optional: black pepper, garlic powder, onion powder
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Potatoes:
- Wash the potatoes thoroughly under cold running water.
- Dry them completely with a clean towel.
- Using a fork, pierce the potatoes several times on all sides. This helps steam escape and prevents the potatoes from bursting.
- Oil and Season:
- Rub each potato with olive oil, ensuring it’s coated evenly.
- Sprinkle generously with coarse sea salt, rubbing it into the skin. If desired, add black pepper, garlic powder, or onion powder.
- Bake:
- Place the potatoes directly on the oven rack or on a baking sheet.
- Bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces the center of the potato. The baking time will vary depending on the size of the potatoes.
- Check for Doneness:
- To check if the potatoes are done, gently squeeze them. They should feel soft. You can also insert a fork or knife into the center; it should go in easily.
- Serve:
- Remove the potatoes from the oven and let them cool slightly.
- Cut a slit in the top of each potato and gently squeeze the sides to fluff the inside.
- Serve immediately with your favorite toppings.
Optional Toppings:
- Butter
- Sour cream or Greek yogurt
- Shredded cheese (cheddar, Monterey Jack, etc.)
- Bacon bits
- Chopped chives or green onions
- Salsa
- Chili
- Broccoli and cheese.
Tips for Crispy Skin:
- Ensure the potatoes are completely dry before oiling and salting.
- Baking them directly on the oven rack allows for better air circulation, resulting in crispier skin.
- Do not wrap the potatoes in foil, this will steam them, and prevent crispy skin.
