Ingredients:

  • For the Fritters:
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 cup granulated sugar
    • 1 large egg
    • 1/2 cup milk
    • 1 teaspoon vanilla extract
    • 2 medium apples (like Granny Smith or Honeycrisp), peeled, cored, and diced
    • Vegetable oil, for frying
  • For the Glaze:
    • 2 cups powdered sugar
    • 1/4 cup milk
    • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Batter:
    • In a large bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and sugar.
    • In a separate bowl, whisk together egg, milk, and vanilla extract.
    • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
    • Gently fold in the diced apples.
  2. Fry the Fritters:
    • Heat about 2 inches of vegetable oil in a large, deep skillet or Dutch oven over medium heat (350°F/175°C).
    • Drop spoonfuls of batter into the hot oil, about 2-3 at a time, being careful not to overcrowd the skillet.
    • Fry for 2-3 minutes per side, or until golden brown and cooked through.
    • Remove the fritters with a slotted spoon and drain on paper towels.
  3. Prepare the Glaze:
    • In a medium bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  4. Glaze the Fritters:
    • Dip the warm fritters into the glaze, coating them completely.
    • Place the glazed fritters on a wire rack to allow the glaze to set.
  5. Serve:
    • Serve the apple fritters warm.

Tips and Variations:

  • Apple Variety: Use a firm apple that holds its shape well during cooking.
  • Spice it Up: Add a pinch of ground cloves or ginger to the batter.
  • Raisins or Nuts: Add raisins or chopped nuts to the batter for added texture and flavor.
  • Cinnamon Sugar: Sprinkle the warm fritters with cinnamon sugar instead of glazing them.
  • Caramel Glaze: Use a caramel glaze instead of a vanilla glaze.
  • Make-Ahead: You can prepare the batter ahead of time and refrigerate it for up to 24 hours. Fry the fritters just before serving.
