Classic Apple-Filled Butter Pastries

Ingredients

  • 2 cups all-purpose flour
  • 1 cup cold unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 4-5 tablespoons cold water
  • 3 medium apples (Granny Smith or your choice), peeled, cored, and diced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • Optional: powdered sugar for dusting

Instructions

  1. Prepare the Pastry Dough:
In a large mixing bowl, combine flour, sugar, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, until the dough just comes together. Avoid overworking the dough. Shape into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  2. Prepare the Apple Filling:
In a medium bowl, combine diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss well to coat the apples evenly.
  3. Roll Out the Dough:
On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut into squares or circles, depending on your preferred shape for pastries.
  4. Assemble the Pastries:
Place a spoonful of apple filling in the center of each dough piece. Fold over to form a triangle or a pocket and press the edges firmly to seal. Use a fork to crimp the edges if desired.
  5. Apply Egg Wash:
Beat the egg and brush the tops of the pastries lightly with the egg wash to achieve a golden brown finish.
  6. Bake:
Preheat the oven to 375°F (190°C). Place the pastries on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden and crisp.
  7. Cool and Serve:
Let the pastries cool slightly on a wire rack. Optionally, dust with powdered sugar before serving.
