Cinnamon Swirl Apple Fritter Bread

Ingredients

For the Bread:

  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

For the Apple Mixture:

  • 2 large apples (peeled and chopped)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

For the Glaze:

  • 1/2 cup powdered sugar
  • 1–2 tablespoons milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a small bowl, mix 1/3 cup brown sugar and 1 teaspoon cinnamon. Set aside.
  3. In another bowl, combine chopped apples, 2 tbsp sugar, and 1 tsp cinnamon. Set aside.
  4. In a large bowl, cream together the butter and 2/3 cup white sugar until smooth. Beat in eggs one at a time, then stir in vanilla.
  5. In a separate bowl, whisk together flour and baking powder. Slowly add to creamed mixture, alternating with the milk. Mix until just combined.
  6. Pour half the batter into the prepared loaf pan. Add half the apple mixture, then half the brown sugar/cinnamon mixture. Lightly swirl with a knife.
  7. Add remaining batter, top with remaining apples and brown sugar/cinnamon. Swirl again gently.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan 10 minutes, then transfer to a wire rack.
  9. While the bread cools, whisk powdered sugar and milk to make glaze. Drizzle over cooled bread.
