Ingredients
For the Bread:
- 1/3 cup light brown sugar
- 1 teaspoon ground cinnamon
- 2/3 cup white sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
For the Apple Mixture:
- 2 large apples (peeled and chopped)
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
For the Glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk or cream
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a small bowl, mix 1/3 cup brown sugar and 1 teaspoon cinnamon. Set aside.
- In another bowl, combine chopped apples, 2 tbsp sugar, and 1 tsp cinnamon. Set aside.
- In a large bowl, cream together the butter and 2/3 cup white sugar until smooth. Beat in eggs one at a time, then stir in vanilla.
- In a separate bowl, whisk together flour and baking powder. Slowly add to creamed mixture, alternating with the milk. Mix until just combined.
- Pour half the batter into the prepared loaf pan. Add half the apple mixture, then half the brown sugar/cinnamon mixture. Lightly swirl with a knife.
- Add remaining batter, top with remaining apples and brown sugar/cinnamon. Swirl again gently.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan 10 minutes, then transfer to a wire rack.
- While the bread cools, whisk powdered sugar and milk to make glaze. Drizzle over cooled bread.
