A warm and comforting cinnamon pudding, perfect for a cozy dessert.
Ingredients:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 teaspoon salt
- 2 large egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- Whipped cream or cinnamon sticks (for garnish, optional)
Instructions:
- Combine Dry Ingredients: In a medium saucepan, whisk together the granulated sugar, cornstarch, ground cinnamon, nutmeg (if using), and salt.
- Add Milk and Egg Yolks: Gradually whisk in the milk until the mixture is smooth. In a separate small bowl, lightly whisk the egg yolks. Add a few tablespoons of the milk mixture to the egg yolks, whisking constantly to temper them (this prevents the eggs from scrambling). Then, pour the tempered egg yolks into the saucepan.
- Cook the Pudding: Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken and bubble. Continue to cook for 1-2 minutes, still stirring, until the pudding is thick and smooth.
- Add Butter and Vanilla: Remove the saucepan from the heat and stir in the butter and vanilla extract until they are completely melted and incorporated.
- Cool and Serve: Pour the pudding into individual serving dishes. Cover the dishes with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming. Chill in the refrigerator for at least 2 hours, or until set.
- Garnish (Optional): Before serving, garnish with whipped cream and a sprinkle of extra cinnamon or a cinnamon stick.
