Cinnamon Donut Bread recipe

Ingredients

For the Bread:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar or lemon juice, let sit 5 minutes)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

For the Cinnamon Sugar Topping:

  • 1/4 cup unsalted butter, melted
  • 1/3 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in eggs, one at a time, then add vanilla and buttermilk. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually stir the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then remove to a wire rack.
  9. While the bread is still warm, brush the top with melted butter. Mix the sugar and cinnamon together and sprinkle generously over the top.

Optional: For extra flavor, roll the sides of the loaf in the cinnamon sugar mix after buttering.
