Cinnamon Bread from the Amish

INGREDENT

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar
  • 1 egg
  • 1 cup buttermilk
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract

Cinnamon Sugar Swirl:

  • ⅓ cup sugar
  • 1½ teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. In another bowl, combine egg, buttermilk, oil, and vanilla. Stir the wet mixture into the dry ingredients just until moistened—do not overmix.
  4. In a small bowl, mix the cinnamon and sugar for the swirl.
  5. Pour half the batter into the prepared pan. Sprinkle half the cinnamon-sugar over the batter. Pour in the rest of the batter, then sprinkle the remaining cinnamon-sugar on top.
  6. Use a knife to swirl the cinnamon-sugar into the batter by cutting through it in a zigzag motion.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
