Chow Mein

Chow Mein is a classic Chinese stir-fried noodle dish loaded with vegetables, tender proteins like chicken or shrimp, and a savory sauce. It’s a delicious and versatile meal, perfect for a quick lunch or dinner.

Ingredients

  • 12 oz chow mein noodles (or thin egg noodles)
  • 2 tbsp vegetable oil
  • 1 lb chicken breast or shrimp (cut into small pieces)
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 cup cabbage, shredded
  • 1 cup carrots, julienned
  • 1 cup bell peppers, thinly sliced
  • 1/2 cup bean sprouts (optional)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • Salt and pepper, to taste
  • Green onions (optional garnish)

Instructions

  1. Cook the noodles: Boil the chow mein noodles according to package instructions. Drain and set aside.
  2. Prepare the sauce: In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and sugar. Set aside.
  3. Stir-fry the protein: Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the chicken or shrimp and stir-fry until cooked through. Remove from the pan and set aside.
  4. Cook the vegetables: In the same pan, add the remaining oil. Stir-fry the onion and garlic until fragrant, about 1-2 minutes. Add cabbage, carrots, and bell peppers, and stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.
  5. Combine everything: Add the cooked noodles and chicken/shrimp back into the pan. Pour the prepared sauce over the mixture and toss everything together, ensuring the noodles and vegetables are well coated. Add bean sprouts if using.
  6. Season and serve: Season with salt and pepper to taste. Garnish with chopped green onions and serve hot.
