Ingredients
- 12 oz chow mein noodles (or thin egg noodles)
- 2 tbsp vegetable oil
- 1 lb chicken breast or shrimp (cut into small pieces)
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 cup cabbage, shredded
- 1 cup carrots, julienned
- 1 cup bell peppers, thinly sliced
- 1/2 cup bean sprouts (optional)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- Salt and pepper, to taste
- Green onions (optional garnish)
Instructions
- Cook the noodles: Boil the chow mein noodles according to package instructions. Drain and set aside.
- Prepare the sauce: In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and sugar. Set aside.
- Stir-fry the protein: Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the chicken or shrimp and stir-fry until cooked through. Remove from the pan and set aside.
- Cook the vegetables: In the same pan, add the remaining oil. Stir-fry the onion and garlic until fragrant, about 1-2 minutes. Add cabbage, carrots, and bell peppers, and stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.
- Combine everything: Add the cooked noodles and chicken/shrimp back into the pan. Pour the prepared sauce over the mixture and toss everything together, ensuring the noodles and vegetables are well coated. Add bean sprouts if using.
- Season and serve: Season with salt and pepper to taste. Garnish with chopped green onions and serve hot.
