Chow Chow (Old Fashioned)

Ingredients

  • 1 medium head green cabbage, finely chopped
  • 6 green tomatoes, chopped
  • 6 medium onions, chopped
  • 4 green bell peppers, chopped
  • 4 red bell peppers, chopped
  • 2 tablespoons salt
  • 2 cups sugar
  • 2 cups white vinegar
  • 1 tablespoon mustard seeds
  • 1 tablespoon celery seeds
  • 1 teaspoon turmeric

Instructions

  1. Prepare vegetables: In a large bowl, combine cabbage, tomatoes, onions, and bell peppers. Sprinkle with salt and let sit for 4 hours, then drain well.
  2. Cook the relish: In a large pot, add the drained vegetables, sugar, vinegar, mustard seeds, celery seeds, and turmeric. Stir well to combine.
  3. Simmer: Bring to a boil over medium heat. Reduce heat and simmer uncovered for about 30–40 minutes, stirring occasionally, until vegetables are tender and the mixture thickens slightly.
  4. Can or store: Spoon the hot mixture into sterilized jars and seal. Let cool, then refrigerate or process in a water bath canner for long-term storage.
  5. Enjoy: Serve with beans, hot dogs, pulled pork, or grilled vegetables.
