Ingredients
- 1 medium head green cabbage, finely chopped
- 6 green tomatoes, chopped
- 6 medium onions, chopped
- 4 green bell peppers, chopped
- 4 red bell peppers, chopped
- 2 tablespoons salt
- 2 cups sugar
- 2 cups white vinegar
- 1 tablespoon mustard seeds
- 1 tablespoon celery seeds
- 1 teaspoon turmeric
Instructions
- Prepare vegetables: In a large bowl, combine cabbage, tomatoes, onions, and bell peppers. Sprinkle with salt and let sit for 4 hours, then drain well.
- Cook the relish: In a large pot, add the drained vegetables, sugar, vinegar, mustard seeds, celery seeds, and turmeric. Stir well to combine.
- Simmer: Bring to a boil over medium heat. Reduce heat and simmer uncovered for about 30–40 minutes, stirring occasionally, until vegetables are tender and the mixture thickens slightly.
- Can or store: Spoon the hot mixture into sterilized jars and seal. Let cool, then refrigerate or process in a water bath canner for long-term storage.
