  • 1 cup soft caramels (about 20 pieces)
  • 2 tbsp heavy cream
  • 1 cup semi-sweet chocolate chips (or dark chocolate if preferred)

Instructions:

  1. Prepare the pecans:
    • Preheat the oven to 350°F (175°C).
    • Spread the pecans on a baking sheet and toast in the oven for about 8-10 minutes, until fragrant. Set aside to cool.
  2. Make the caramel sauce:
    • In a microwave-safe bowl, combine caramels and heavy cream.
    • Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  3. Assemble the turtles:
    • On a parchment-lined baking sheet, arrange small clusters of pecans (3-4 pecans per cluster).
    • Spoon the caramel mixture over each pecan cluster. Let it set for 10-15 minutes.
  4. Melt the chocolate:
    • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval until smooth.
  5. Top with chocolate:
    • Spoon melted chocolate over each caramel-coated pecan cluster.
    • Optional: Sprinkle sea salt on top of each turtle for a salted caramel variation.
  6. Cool and serve:
    • Let the chocolate set by cooling in the fridge for 20-30 minutes.
