- 1 cup soft caramels (about 20 pieces)
- 2 tbsp heavy cream
- 1 cup semi-sweet chocolate chips (or dark chocolate if preferred)
- Sea salt (optional, for topping)
Instructions:
- Prepare the pecans:
- Preheat the oven to 350°F (175°C).
- Spread the pecans on a baking sheet and toast in the oven for about 8-10 minutes, until fragrant. Set aside to cool.
- Make the caramel sauce:
- In a microwave-safe bowl, combine caramels and heavy cream.
- Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- Assemble the turtles:
- On a parchment-lined baking sheet, arrange small clusters of pecans (3-4 pecans per cluster).
- Spoon the caramel mixture over each pecan cluster. Let it set for 10-15 minutes.
- Melt the chocolate:
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval until smooth.
- Top with chocolate:
- Spoon melted chocolate over each caramel-coated pecan cluster.
- Optional: Sprinkle sea salt on top of each turtle for a salted caramel variation.
- Cool and serve:
- Let the chocolate set by cooling in the fridge for 20-30 minutes.
- Once set, remove from parchment and store in an airtight container at room temperature or in the fridge.
